Bread Improvers

In connection with the yeast business and to cater to the needs of the baking industry, Fermex manufactures a whole range of bread improvers. They are developed to target various issues related to flour quality, type of equipment, bread making processes or even existing regulations. All these factors are assessed by our Technical department who then creates the appropriate formula to fulfill a specific purpose. None of the raw materials used in the formulation of the Fermex improvers contains any product of animal origin or any genetically modified material. Our improvers are manufactured under a HACCP Food Safety program and are Halal accredited.

2019 Continental 1% The Continental improver is formulated for use in the production of continental dinner rolls and bread to improve crust and crumb quality and delay staling. The finest emulsifiers used in Fermex Continental improve dough machining and handling and increase oven spring. It is ideal when used to supplement Fermex Instant improver. The usage rate varies from 0.5% to 1% of cereal weight. Continental is packed in a 15kg box and has a shelflife of 6 months.

2066 Croissant improver 1% Croissant improver has been developed for use in the manufacture of fresh or frozen doughs and retarded sweet rolls and croissants. The maximum usage rate is 1% on flour weight. This improver is packed in 15kg box and has a 6 month shelflife.

2155 Safex Improver 1% Safex is a general purpose bread dough improver recommended in the production of white, wholemeal and multi-grain bread as well as bread rolls and similar flour based baked products. It can be used with single and two arms mixers as well as high speed small impeller mixers. The usage rate is 1% on flour weight. Safex is sold in 15kg box and has a shelflife of 6 months.

2160 Deluxe improver 1% Deluxe has been formulated as a general purpose dough improver suitable for the production of white bread , wholemeal and multi-grain as well as bread rolls. Deluxe can be used with high speed small impeller mixers The recommended usage rate is 1% on flour weight. Deluxe is commercialised in both 15 kg box and 25kg bag. This improver has a 6 month shelflife as well as single and two arm mixers.

2363 Freezex (frozen dough) 1% Freezex has been developed for use in the manufacture of breads and rolls made from frozen and retarded doughs. Unique enzymes give increased volume to the baked product after freezing or retardation. The usage rate is 1% on flour weight. Freezex is sold in 15kg box and has a 6 month shelflife

2425 Instant Improver 0.5% Instant is formulated for use as a general purpose dough improver and is ideal for the production of mediterranean style bread products. The usage rate is 0.5 % of flour weight. Instant is available in 15kg box and has a shelflife of 6 months.

2510 Fermex plain label Plain label has been formulated for use as an improver in the production of bread and similar cereal flour based baked products.The formulation eliminates the need for code numbers (E numbers) appearing in the ingredients listing of the finished product. It is not suited for use in high speed small impeller mixers.

2530 Point 5 improver 0.5% Point 5 is a total bread improver formulated for the use in the production of high quality bread rolls,continental bread rolls and baguette style bread. Point 5 will give a light crusty finished to your bread products and performs equally well in no-time and extended time fermented doughs. The sophisticated balance of enzymes and emulsifiers slow staling and crust softening. This improver is ideal for the manufacture of par baked supper rolls and bread sticks. Point 5 is sold in 15 kg box and has a 6 month shelflife.

2615 Universal 0.25% Universal is a general purpose dough improver suitable in the production of fermented bulk doughs for the manufacture of white bread and bread rolls and similar wheat flour based baked products. 2405 Gold Crust 1% Gold Crust is formulated for use as a general purpose bread improver in the production of white,wholemeal and multi grain bread and bread rolls and similar wheat flour based bread products.
